Local Cuisine in Kyushu

A unique culture of local cuisine is here.There are a wide array of ramen and shochu in each area.
Ramen has as its base tonkotsu (porkbone soup). You can enjoy the differences in flavor from one area to the next. Kurume ramen is called “the original.” Nagahama ramen is famous for its thin noodles. Kumamoto ramen is flavorful. Kagoshima ramen has stir-fried vegetables in it. Kyushu is also the birthplace of shochu, which is made from various ingredients such as sweet potatoes, wheat, rice and buckwheat.
Local cuisine includes nabe dishes (hot-pot dishes) such as motsu-nabe (motsu: giblets) and mizutaki (Japanese chicken casserole); famous Seki aji and Seki saba (braised horse mackerel and mackerel); usuki globe fish; hamo (pike eel) dishes in Nakatsu; unagi seiro-mushi (steamed eel) in Yanagawa; low-fat, low-calorie raw horsemeat in Kumamoto; the delicious Kagoshima Berkshire pork in Kagoshima; charcoal-grilled Miyazaki jidori (Miyazaki chicken); hiyajiru, which is a concoction of chilled miso soup poured over a bowl of rice; Turkish rice of Nagasaki origin; the famous local specialties champon and sara udon; Shippoku ryori (Shippoku dish); and transparent squid in Yobuko. Kyushu has a rich food culture, as one can easily see.
