

These amazing caves which are located in the easternmost part of Hiraodai are said to be thousands of meters deep. About 1200 meters of these limestone caves are open to the public. Tourists may wear normal shoes up to 480 meters inside the cave, but it is recommended that tourists rent free "zori" (Japanese-style sandals) because of the water currents inside the cave. There is no lighting past 900 meters into the cave so please remember to bring a flashlight if you want to go through the remaining 300 meters.

Chicken and yam paste, carrots, burdock root, Japanese radish, taro, lotus root, and bamboo shoots covered with Japanese sweet rice wine, soy sauce, and sugar are all cooked together for a great salty-sweet meal. This can also be called "chikuzenni." It's just as good as any meal eaten on New Year's Day or any other celebration out of the year!

Mikaeri is one of Japan's top 100 waterfalls and is Kyushu's largest waterfall. Mikaeri Waterfall is a popular tourist attraction for many people throughout the year to see the cherry blossoms bloom in Spring, the hydrangea bloom in Summer and the leaves change color in Fall.

Ikizukuri is the slicing of fish and presenting it at table in its original form. Popular as a specialty in Yobuko port town, fresh squid that was just caught from a preserve is quickly served live. Being fresh and transparent, its taste is slowly revealed to you as you eat. Since there are many kinds of squid, you can try out many kinds of different squid throughout the year.

Squid is actually quite delicate and serving it live is quite difficult but if you want to try squid made this way, there is no better place than here! Anything left over can be made into tempura or grilled so you can even enjoy the same meal in two different ways!

"Todoroki mountain stream" is the source for water for Mt. Taradake, and is one of about thirty clear waterfalls in Nagasaki. Rainbows can be seen in the stream flowing down (Yoryu Waterfall) and the thunderous sound of the Todoroki Waterfall makes this place a natural treasure. Todoroki Stream is chosen one of the top 100 water sources and the surrounding forest one of the top 100 water source forests. There are also camp grounds complete with bungalows!

Nagasaki was the only one port city during Japan's period of national isolation so it took more of a foreign influence than other parts of Japan, and promoted their unique culture at that time. Nagasaki cuisine was especially influenced by China and so it has a unique mix of Japanese cooking and Chinese cooking.

The Harmony of Fresh Leaves, Water and Light.
Nabegataki is about ten meters high and twenty meters wide. You can also go around to the back of this waterfall to see the other side. You can see the light through the trees and the green of the forest behind a curtain of falling water. The forest is practically inviting you to bathe in its beauty. If you talk about Kumamoto cuisine, you have to mention its authentic horse sashimi. Exactly as it's written, horse sashimi is sashimi made from horse meat. Horse meat is actually low in calories and high in protein so it is quite healthy. Adding fresh ginger, garlic, and minced onion condiments with soy sauce make this something you can't miss.

The reason horse sashimi is so delicious is because there is not much fat. Since horse oil melts quite easily in warm temperatures, you can eat horse sashimi and feel refreshed even eating the marbled parts.

Yufugawa Ravine runs through an area between Yufudake and Tsurumidake and is one of Japanese biggest ravines. It is also known as "Tyrol of the East." It is V-shaped and runs anywhere between twenty to fifty meters. The ravine splits into several smaller streams and the beautiful bare rocks that can be found along this ravine can truly be called a work of art.

Beppu cold noodles are an original creation that mixed Korean style cooking with Japanese style. It is known for its Japanese style soup and home-style thick noodles.

Manai Waterfall is Takachiho Gorge's most important location. Since you can get close to the waterfall in a rowboat, you can really experience the power of Manai. During the Summer season (middle of July to the first part of September, 7pm-10pm), you can experience a magical light show in the areas surrounding the waterfall. Hiyajiru is true Miyazaki-style home-cooking. It is made with horse mackerel, fried sesame seeds, and miso soup that were heated over a fire all in an earthenware mortar and then with some soup stock. Then you mix it with tofu and circularly-cut cucumber and finely-cut beefsteak plant and then cool the finished product in the refrigerator. You can put hiyajiru on white rice or boiled barley and rice and eat it in the same way that you would eat the Japanese dish "ochazuke," or rice with green tea poured on it.

The way these dishes are cooked will depend on the area and the household but for the Miyazaki locals it is probably best eaten during the summer. Many people also consider Japanese cold soup to be a good way to deal with the summer heat even if you're not hungry. People also consider it to be a good cure for hangovers.

Inukai Waterfall has Takachiho for a background and vibrates the otherwise still air of the surrounding area. All of the colors of the rainbow can be easily seen in the splashing water of Inukai. The water falls thirty-six meters straight down from a steep cliff. Inukai is twenty-two meters wide and is quite the spectacle.
It is also the famous waterfall in the story where Ryoma Sakamoto, the one of the key players in the Meiji Reformation, watched it with his wife Oryo.

"Somen Nagashi" uses a bamboo gutter for serving fine white noodles. You get and dip it into your sauce with your chopsticks. It is quite common to eat this way in the summer. It first started in 1962 using spring. Soon after that, a special rotary device using hydraulics was developed and patented. It was because of this device the rest of Japan was able to enjoy this delicious dish.

The rotary vermicelli serving method is different from the conventional way (dropping vermicelli vertically) and gives everyone equal chance to get the flowing vermicelli no matter where you sit. About 300,000 people come to Tousen Gorge (Ibusuki City), the birthplace of "Somen Nagashi," every year. This event is a popular summer feature in Minami Satsuma district.
