Spicy mentaiko is one of Fukuoka’s staple food item. Offering an unique DIY-style course is Spicy Mentaiko Dojo found at the Hakata Haneya Sohonke flagship store. Participants will prepare their pollock roes for acid fermentation following a lecture given by the master of the Dojo. Your own original, one-and-only mentai is brought to life after they are soaked in your own concoction of yuzu citrus, seaweed, chili pepper, sake and other ingredients. A completion certificate is awarded to those who go through the 30 to 40-minute program. Following the program, the Fukuoka-specialty side dish is ready to be served after five days fermentation in your home refrigerator.
All supplies and tools are provided, making it easy for anyone to casually join the course. The staff of Spicy Mentaiko Dojo comments, ”[w]e are ready to welcome any and all participants. 200g pack are recommended for groups and families. Enjoy the food and the process of making your own original mentaiko.” The course is quite a hit among participants of all sorts - from individuals to a group of students and businesses.
